Healthy chicken fajitas
Fajitas are a family favourite, and we show you how to make them even more delicious with homemade seasoning.
1. Heat olive oil in a large saucepan and sauté garlic and onion for 2 minutes.
2. Add cumin, coriander and turmeric, and cook for 1 minute. Add lentils, stock, tomato paste and pumpkin and bring to the boil.
3. Reduce heat to simmer and cook for 15 minutes.
4. Add peas and corn and cook for an additional 5 minutes.
5. Serve with steamed rice.
