Warm asparagus and capsicum quinoa salad

25 minutes (10 minutes)
Serves 4
    2/3 cup quinoa
  • 2 cups (500ml) water
  • 1 tablespoon (20g) Flora pro-activ Original or Buttery
  • 1 tablespoon sunflower oil
  • 1 red capsicum
  • 2 cups sliced spring onions
  • 2 bunches asparagus, trimmed and sliced
  • 2 cloves garlic
  • 1/4 cup chopped parsley
  • 2 tablespoons chopped dill
  • 1 tablespoon salt reduced soy sauce and lime wedges, to serve
???Place quinoa and water in a saucepan over a medium heat and bring to the boil. Reduce heat and simmer for 15 minutes. Drain any excess water.

Heat Flora pro-activ and oil in a wok over high heat. Add capsicum and cook, stirring for 2 minutes. Add the onions, asparagus and garlic and cook, stirring , just until the onion and asparagus are bright green. Stir in the quinoa, parsley and dill. Serve with lime wedges and a dash of soy sauce.
