White bean and spinach bruschetta

Creamy beans on toast with spinach and olive oil for a quick, tasty, heart-healthy meal that’s rich in fibre.

Ingredients

  • Extra virgin olive oil

    2 tablespoons extra virgin olive oil

  • White beans

    400g can no added salt white beans, drained, rinsed

  • Garlic

    1 clove garlic, crushed

  • Baby spinach leaves

    100g baby spinach leaves

  • Lemon

    1 small lemon, halved

  • Wholegrain sourdough bread

    4 small slices wholegrain sourdough bread, toasted

  • Smooth ricotta

    2 tablespoons smooth ricotta

  • Fresh basil and dried chilli flakes

    Fresh basil leaves and dried chilli flakes, to serve (optional)

Method

  1. White beans and garlic cooking in a frying pan

    Heat 1½ tablespoons of the olive oil in a large frying pan over a medium heat. Add beans and garlic. Cook, stirring, for about 5 minutes, until beans are hot. Mash slightly.

  2. Spinach wilting into the bean mixture

    Squeeze over juice from one lemon half. Add spinach. Season with pepper. Cook, stirring, for a further 1–2 minutes, until spinach is just wilted.

  3. Toast spread with ricotta and topped with the bean mixture

    Spread toast with ricotta. Top with bean mixture.

  4. Finished bruschetta sprinkled with basil and chilli flakes

    Sprinkle with basil and chilli flakes. Drizzle over remaining olive oil. Squeeze over remaining lemon half.

Tips

  • Basil can be replaced with fresh parsley or a sprinkle of dried Italian herb blend.
  • Cottage cheese can be used instead of ricotta.
  • Fresh spinach can be replaced with frozen spinach. Thaw and squeeze out excess liquid before using.
