Tuna and corn quinoa cups

Make-ahead and freezer-friendly, these tasty tuna, vegetable and quinoa cups are perfect for lunchboxes.

Ingredients

  • Quinoa

    1/3 cup quinoa, rinsed

  • Eggs

    6 large eggs

  • Ricotta cheese

    200g reduced fat ricotta cheese, crumbled

  • Tuna

    185g can tuna in spring water, drained, flaked

  • Frozen corn kernels

    1 cup frozen corn kernels, thawed

  • Grated zucchini

    1 cup grated zucchini (1 medium zucchini)

  • Spring onions

    2 green spring onions, thinly sliced

  • Grated tasty cheese

    ¾ cup grated tasty cheese

Method

  1. Quinoa cooking in a saucepan

    Place quinoa and 2/3 cup water in a small saucepan. Bring to the boil. Reduce heat, simmer covered for 10-15 minutes or until all the liquid has been absorbed. Remove. Stand covered 10 minutes.

    Whisk eggs and ricotta in a large bowl.

  3. Quinoa, tuna, corn, zucchini, spring onions and cheese combined

    Stir in quinoa, tuna, corn, zucchini, onions and grated cheese.

    Spray a 12-hole (1/3 cup capacity) non-stick muffin pan or silicone muffin tray with olive oil. Spoon mixture evenly into prepared pan (about a heaped 1/3 cup mixture into each hole). Bake in 180°C (fan-forced) preheated oven for about 25 minutes, until set and light golden.

    Stand quinoa cups in pan 5 minutes, then loosen edges and remove. Serve warm or chilled.

Tips

  • Use a non-stick muffin pan (or a silicone muffin tray) to ensure quinoa cups turn out of the pan easily.

  • Task for kids: grate zucchini and cheese; whisk eggs and ricotta; stir ingredients together.

  • Make ahead: Bake a batch on the weekend and store in the fridge for up to 3 days for easy lunchbox packing.

  • Try simple swaps: Replace tuna with 210g canned pink or red salmon

  • Keep it cool: Pack with an ice brick to keep lunchboxes cool and food safe.
