
Packed with chicken and crunchy veggies, these easy wraps are perfect for lunchboxes and busy mornings.
2 medium wholemeal wraps
2 tablespoons smooth ricotta
2 teaspoons sweet chilli sauce
1 small carrot, peeled and grated
1 small Lebanese cucumber, cut into 1cm thick sticks
2/3 cup (100g) chopped cooked chicken breast
¼ cup chopped fresh mint and/or coriander leaves
Spread wraps with ricotta. Drizzle with sweet chilli sauce.
Divide carrot, cucumber and cucumber across the centre of wraps. Sprinkle with fresh herbs.
Roll up wraps, folding in sides to enclose filling. Wrap in baking paper. Refrigerate. Serve whole or cut in half.
