Pistachio smoothie

Creamy and nutty with a hint of lemon, this pistachio smoothie blends avocado, banana, and spinach for a heart-healthy, fibre-rich start to the day.

Ingredients

Frozen banana slices

90g frozen banana slices (see tip)

Avocado

½ avocado, chopped

Almond milk

½ cup unsweetened almond milk

Greek yoghurt

¼ cup fat-reduced plain Greek yoghurt

Honey (illustrative image shown)

2 tsp honey

Baby spinach leaves

15g baby spinach leaves

Lemon

2 teaspoons lemon juice

Pistachio kernels

2 tablespoons unsalted pistachio kernels, plus 2 teaspoons extra to serve

Ice cubes

Handful ice cubes (about ½ cup)

Method

Combine ingredients in a blender

Combine all ingredients in a blender.

Blending until smooth

Blend until smooth.

Pour into a tall glass. Serve sprinkled with extra finely chopped pistachios.

Tips

  • Smoothies are a great way to use up ripe bananas.
  • For 90g frozen banana, peel and slice 1 medium, ripe banana. Place in a container in freezer for several hours or overnight until frozen. Fresh banana can be used instead of frozen, if preferred.
  • Read Labels: choose calcium fortified, unsweetened almond milk.
