No-bake choc peanut slice

This no-bake slice combines oats, chickpeas and peanut butter for a delicious freezer-friendly treat.

Ingredients

  • Wholegrain rolled oats

    1¼ cups (115g) wholegrain rolled oats

  • Chickpeas

    400g can no-added salt chickpeas, drained, rinsed

  • Almond meal

    ½ cup almond meal

  • Peanut butter

    ½ cup unsalted, no added sugar peanut butter or nut spread

  • Maple syrup

    ¼ cup maple syrup

  • Vanilla extract

    1 tablespoon vanilla extract

  • Dark cooking chocolate

    120g dark cooking chocolate, broken into pieces

  • Olive oil

    2 teaspoons olive oil

  • Roasted unsalted peanuts

    ¼ cup chopped, roasted unsalted peanuts

Method

  1. Rolled oats being processed into a fine powder

    Process oats in a food processor to produce a fine powder.

  2. Chickpeas, almond meal, peanut butter, maple syrup and vanilla added to the food processor

    Add chickpeas, almond meal, peanut butter, maple syrup and vanilla to food processor.

  3. Slice mixture pressed into a lined square cake pan

    Process until smooth and combined, stopping once or twice to scrape down the side of food processor bowl. Press mixture into a lightly oiled and baking paper-lined 20cm square cake pan.

  4. Melted chocolate poured over the slice base and sprinkled with peanuts

    Place chocolate and oil in a heatproof bowl. Microwave on High (100%) for about 1 minute, stirring halfway through, until chocolate is smooth and melted. Pour over base. Sprinkle with peanuts. Place in freezer for 1 hour or until firm. Turn out. Cut into 16 squares. Transfer to a container and keep refrigerated or frozen (see tips).

Tips

  • Honey can be used instead of maple syrup
  • Smooth or crunchy peanut butter can be used.
  • Store slice in a container in the fridge for up to 2 weeks, or in the freezer for up to 2 months. Remove from freezer 15-20 minutes before serving to allow it to soften slightly.
