Barbecued sumac prawns with mango avocado salad

Fresh prawns, mango and avocado make this colourful salad an easy, heart-healthy crowd-pleaser.

Ingredients

  • Raw king prawns

    24 raw king prawns, peeled, deveined, tails intact (see tip)

  • Garlic cloves

    3 cloves garlic, crushed

  • Lemon

    Finely grated rind and juice of 1 lemon

  • Olive oil

    1/3 cup olive oil

  • Ground sumac

    2½ tsp ground sumac

  • Honey

    2 teaspoons honey

  • Mixed salad leaves

    100g mixed salad leaves

  • Fresh mint leaves

    1 cup fresh mint leaves

  • Medley cherry tomatoes

    250g medley cherry tomatoes, halved

  • Mango

    1 large mango, peeled, cut into thin wedges

  • Avocado

    1 large avocado, cut into thin wedges

  • Roasted macadamias

    1/3 cup unsalted, roasted macadamias, toasted

Method

  1. Prawns marinating in a bowl with garlic, lemon rind, olive oil and sumac

    Place prawns in a large bowl. Add garlic, lemon rind, 2 tablespoons of the olive oil and 2 tsp sumac. Season with pepper. Toss to coat well. Refrigerate for 30 minutes.

  2. Whisking lemon juice, honey, olive oil and sumac to make the dressing

    For dressing, whisk 1 tablespoon lemon juice and honey with the remaining 2 tablespoons of olive oil and ½ teaspoon sumac.

    Heat a barbecue plate over a medium-high heat. Add prawns in a single layer. Cook for 2-3 minutes on each side, until changed in colour and tender. Transfer to a plate.

    To serve, arrange salad leaves, mint, tomatoes, mango, avocado and prawns on a large serving plate. Sprinkle with macadamias. Drizzle over dressing.

Tips

  • Prawns can be replaced with 500g skinless salmon portions, chicken tenderloins or squid (cut into 4cm pieces). Cooking time will vary.
  • To butterfly prawns, use a small sharp knife to make a cut down the length of prawns from the head end to the tail, about halfway through. Use the tip of your knife to remove and discard the vein, then gently press to open prawns so they lay flat.
  • Unsalted cashews, slivered almonds or pinenuts can be used instead of macadamias.
  • For a touch of spicy heat, add 1 teaspoon dried chilli flakes in step 1.
  • Honey can be replaced with maple syrup
