Ingredients

  • ¼ cup (30 g) slivered almonds, toasted
  • 180 g roasted capsicum (peppers), drained, chopped
  • â…“ cup (70 g) semi-dried tomatoes, drained, chopped
  • ¼ cup fresh parsley leaves
  • 1 small clove garlic, chopped
  • ¼ cup olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon smoked paprika

Method

Step 1

Process almonds in a food processor until finely chopped.

Step 2

Add remaining ingredients. Process to form a thick paste. Season with freshly ground pepper.

Tips

  • Roasted capsicum and semi-dried tomatoes are available from the deli counter in supermarkets.
  • Serve with grilled seafood, chicken, lamb or char-grilled vegetables.
  • Dollop over vegetable soup for a tasty flavour boost or serve as a tasty dip with raw vegetable sticks.
