Lemon herb salad dressing

5 minutes
Serves 170ml
    1/4 cup lemon juice
  • 2 teaspoons grated lemon zest
  • 2 teaspoons Dijon mustard
  • 1/2 cup olive oil
  • 1 tablespoon red wine vinegar
  • 2 tablespoons parsley, finely chopped
  • 2 teaspoons chives, finely chopped
Place all ingredients in a medium jar with a tight-fitting lid, and shake
to combine.

Can keep in the refrigerator for up to 5 days. Shake well before serving.
