Turkey meatloaf with mustard glaze
- Canola spray
- 1kg lean turkey mince
- 1 cup fresh whole grain breadcrumbs (see Tips)
- 1 onion, grated
- 1 carrot, grated
- 2 tablespoons salt reduced tomato sauce
- 2 tablespoons wholegrain mustard
- 1 large egg
- 2 tablespoons chopped fresh parsley
- 250g cherry tomatoes, halved
- *Glaze:*
- 1 tablespoon salt reduced tomato sauce
- 1 tablespoon wholegrain mustard
- 1 tablespoon hot water
- 1 teaspoon brown sugar
- Chat potatoes and steamed green vegetables, to serve
in a food processor.
Leftover meatloaf can be kept covered in the refrigerator for up to 2 days.
Serve cold with salad.
