Turkey meatloaf with mustard glaze

1 hour
Serves 8
    Canola spray
  • 1kg lean turkey mince
  • 1 cup fresh whole grain breadcrumbs (see Tips)
  • 1 onion, grated
  • 1 carrot, grated
  • 2 tablespoons salt reduced tomato sauce
  • 2 tablespoons wholegrain mustard
  • 1 large egg
  • 2 tablespoons chopped fresh parsley
  • 250g cherry tomatoes, halved
  • *Glaze:*
  • 1 tablespoon salt reduced tomato sauce
  • 1 tablespoon wholegrain mustard
  • 1 tablespoon hot water
  • 1 teaspoon brown sugar
  • Chat potatoes and steamed green vegetables, to serve
To make breadcrumbs, tear day old whole grain bread into pieces and process
in a food processor.

Leftover meatloaf can be kept covered in the refrigerator for up to 2 days.
Serve cold with salad.
