Three pea stir-fry

Serves 4 (as a side)
    1 teaspoon salt reduced soy sauce
  • 2 teaspoons honey
  • 1 teaspoon sesame oil
  • 1 tablespoon canola, sunflower or peanut oil
  • 150g sugar snap peas, trimmed
  • 150g snow peas, topped and tailed
  • 2 teaspoons cold water
  • 1 garlic clove, crushed
  • 1 tablespoon finely grated fresh ginger
  • 1 cup frozen or fresh green peas
  • 1 tablespoon sesame seeds, toasted
Combine the soy sauce, honey and sesame oil in a small jug. Set aside.

Heat a wok over a high heat until hot. Add the oil and swirl to coat the surface. Add the sugar snap peas, snow peas, garlic and ginger and stir-fry for 1 minute.

Add the fresh or frozen peas and 2 teaspoons of cold water. Toss to combine then quickly cover the wok and allow to stand for 15 seconds.

Remove the lid, pour over the soy mixture and stir-fry 15 seconds. Remove from the heat scatter over the sesame seeds and serve.

Tip: This stir-fry is a perfect accompaniment for lean beef or chicken, served with steamed rice.
