Grilled pork cutlet with homemade apple sauce, mashed potato and steamed greens

Preheat oven to 150 °C. Spray a large non-stick frying pan with olive oil and set over medium-high heat. Lightly spray cutlets with olive oil. Cook for 3 minutes each side or until golden. Transfer to a baking tray. Bake for 10-15 minutes or until pork is cooked through.
Bring a large pot of water to the boil. Add potatoes and cook until tender, approximately 15 minutes, drain. Add milk and using a potato masher, slowly mash potatoes until smooth and creamy.
Bring a large pan of water to the boil. Add the green beans and broccolini and simmer for 4 minutes until tender. Drain.
Drizzle 1 tablespoon olive oil and lemon juice over the green vegetables before serving.
To make apple sauce, heat sugar and vinegar in a saucepan over low heat until the sugar has dissolved. Add apple and cook, stirring until softened. Stir in the lemon juice. Keep warm.
Serve the pork cutlets, with apple sauce, mashed potato and steamed greens.
