

Grilled pork cutlet with homemade apple sauce, mashed potato and steamed greens
- Spray olive oil
- 4 x 125g lean pork cutlets, fat trimmed
- 4 large Coliban or potatoes suitable for mashing, peeled and halved
- 2 tablespoon reduced fat milk
- 2 cup green beans, trimmed
- 2 bunches broccolini
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
Apple sauce:
- 1 tablespoon caster sugar
- 50ml apple cider vinegar
- 2 large Granny Smith apples, peeled, cored and chopped
- 1 teaspoon lemon juice
- Preheat oven to 150°C. Spray a large non-stick frying pan with olive oil and set over medium-high heat. Lightly spray cutlets with olive oil. Cook for 3 minutes each side or until golden. Transfer to a baking tray. Bake for 10-15 minutes or until pork is cooked through.
- Bring a large pot of water to the boil. Add potatoes and cook until tender, approximately 15 minutes, drain. Add milk and using a potato masher, slowly mash potatoes until smooth and creamy.
- Bring a large pan of water to the boil. Add the green beans and broccolini and simmer for 4 minutes until tender. Drain.
- Drizzle 1 tablespoon olive oil and lemon juice over the green vegetables before serving.
