Blueberry chia pot

  • 3/4 cup reduced fat milk
  • 1/2 teaspoon vanilla extract
  • 1/4 cup chia seeds
  • 1 apple, half chopped and half grated
  • 2 tablespoons blueberries (fresh or frozen), to serve
  • 1 tablespoon coconut flakes, to serve
  • Combine milk, vanilla extract, chia seeds and grated apple in a medium-size bowl. Spoon mixture into 2 small bowls or jars and refrigerate for at least 30 minutes or until mixture is set.
  • Top with blueberries, apple and flaked coconut to serve.
