

Avocado caprese salad
- 2 cups rocket
- 11/2 tomatoes, thickly sliced
- 1/2 avocado, cut into thin sliced
- 1/4 reduced fat mozzarella or bocconcini ball (roughly 100g), thinly sliced
- 4 tablespoons basil leaves, roughly chopped
- 1 tablespoon olive oil
- 1/2 teaspoon freshly cracked black pepper
- Spread rocket over the bottom of a serving platter. Overlap the tomato, avocado and mozzarella on top of the rocket.
- Scatter over basil leaves, then drizzle with olive oil and a sprinkle of pepper.
