Preheat oven to 180°C. Line a baking tray with baking paper and set aside.
Whisk eggs, milk, honey and vanilla in a medium shallow dish.
Heat a large non-stick round frying pan over medium heat with spray olive oil. Dip 2 bread slices into the egg mixture, ensuring they are well coated. Add to the pan and cook for 2-3 minutes each side or until golden brown. Transfer to a baking tray and keep warm in the oven. Repeat with remaining bread and egg mixture.
Meanwhile, combine sliced banana, sultanas and cinnamon in a small bowl and toss to combine.
Place French Toast onto serving plates and top with fruit mix and yoghurt. Garnish with extra cinnamon.
