Banana French Toast

Ingredients

  • 4 slices wholemeal bread
  • 2 eggs
  • ½ cup reduced fat milk
  • ½ tablespoon honey
  • ½ teaspoon vanilla extract
  • Spray olive oil
  • 1 banana, sliced
  • 1 tablespoon sultanas
  • ½ teaspoon cinnamon
  • 300g reduced fat Greek Yoghurt, to serve

Method

Method

  1. Preheat oven to 180°C. Line a baking tray with baking paper and set aside.
  2. Whisk eggs, milk, honey and vanilla in a medium shallow dish.
  3. Heat a large non-stick round frying pan over medium heat with spray olive oil. Dip 2 bread slices into the egg mixture, ensuring they are well coated. Add to the pan and cook for 2-3 minutes each side or until golden brown. Transfer to a baking tray and keep warm in the oven. Repeat with remaining bread and egg mixture.
  4. Meanwhile, combine sliced banana, sultanas and cinnamon in a small bowl and toss to combine.
  5. Place French Toast onto serving plates and top with fruit mix and yoghurt. Garnish with extra cinnamon.
