Capsicum & pea risotto
Add your favourite vegetables or shredded roast chicken for a flavoursome risotto.

Ingredients
2 1/2 cups (625ml) Reduced salt vegetable stock
1 tbsp Crisco Pure Olive Oil*
1 onion, finely chopped
1 red capsicum, halved, seeded, cut into thin slices
2 garlic cloves, crushed
1 cup (200g) arborio rice*
1 cup (120g) Bird’s Eye Baby Peas Whole Frozen*
1/4 cup (20g) grated parmesan
green salad, to serve

Instructions
1 Combine vegetable stock and 2 cups water in a saucepan and bring to boil. Set aside.
2 Heat oil in a large saucepan on medium. Cook onion for 5 mins, stirring, until softened Add capsicum and cook for another 5 mins, stirring, until softened. Stir in garlic and rice, and cook for 1 min, until rice is translucent.
3 Add 1 cup hot stock mixture. Simmer, stirring constantly, and add one ladle of stock at a time as liquid is absorbed. This should take 20-25 mins, until rice is just tender. Stir through peas and cook for another 2-3 mins until heated through.
4 Remove from heat, stir through parmesan and serve risotto with green salad
